Steaks de Coliflor a la Parilla con Chimichurri (comer con amigos muy queridos en la naturaleza)

Cuando viajas, vives en diferentes ciudades, y ademas tienes amigos que les gusta hacer lo mismo, el resultado es amigos dispersos por el planeta a los cuales ves poco y por separado, y tratar de juntar a todos en un lugar puede ser una misión imposible. Por suerte estos amigos, que con los años se reducen en cantidad, pero aumentan en calidad, son tan divers que cada vez que se puede, se toman un avión y y deciden ser parte de locos encuentros en algún lugar lindo del planeta. Y este fin de semana fue así. Amigos del alma reunidos para “meditar”, comer y hacer yoga en el hermoso Samaipata. Pongo “meditar” entre comillas porque no hubo tal, y la idea fue rápidamente reemplazada por cervezas y vino, que sinceramente nadie puede rechazar.

Cabaña en la naturaleza, fuego, comida, charlas, anécdotas, risas y mucha comida. Ya saben como son estas reuniones. Lo genial fue que se formo un super equipo de producción artística que resultara en un video hermoso que pronto verán. Mis amigos son unos genios artistas y cada cual es un personaje en el grupo, distintas ideas, distintas personalidades. Muero por ver el resultado final ! Pronto pronto esperen noticias.

 

IMG_8654IMG_1172Que comimos? Todo al fuego fue la consigna. Todos los hermosos vegetales orgánicos y locales que encontramos en el mercado, las frutas, las sobras. Nos faltó poner el vino al fuego ! La magia del fuego, que ademas de darle un sabor increíble a todo, genera un circulo a su alrededor para compartir mucho mas que solo una comida. Lo hacemos desde que descubrimos el fuego, sentarnos alrededor y compartir conocimientos, sabiduría, canciones, ideas. Hay algo en el fuego muy mágico. Que ganas de vivir en el campo y ser host de encuentros como este !

Yo he estado obsesionada con los steaks de coliflor hace un par de semanas, y pues se dieron las condiciones perfectas para hacerlos. Una vista increíble, animales y una huerta orgánica alrededor, y un grupo de comensales muertos de hambre que comió feliz aunque me olvide de muchos pasos e incluso de ponerles sal ! Jajaja. Pero si te dan comida hecha con amor y ademas tienes hambre todo sabe bien no?

Y si estas en la ciudad ? Prepáralos un domingo en un asado con los amigos ! O en tu casa si quieres mimarte con una cena para 1. Solo prende el horno, calienta bien tu mejor sartén y usa la licuadora para hacer el puré.

Steaks de  Coliflor con Chimichurri y Puré rústico de Coliflor y Ajos asados

4 personas

Ingredientes:

Para los steaks y chimichurri:

  • 2 cabezas grandes de coliflor
  • 1 ramita de perejil, lavado y finamente picado
  • 1 ramita de cebollín, lavado y finamente picado
  • 2 dientes de ajo, pelados y finamente picados
  • 1 trocito de jengibre, pelado y finamente picado
  • 3 limones, jugo
  • 1/2 pimiento rojo, finamente picado
  • Sal y pimienta al gusto

Para el puré:

  • Flores de coliflor, que saldrán al cortar las dos cabezas grandes de coliflor para los steaks.
  • 1 cabeza de ajo, entera
  • 2 cucharas de aceite de oliva
  • Jugo de 1 limón
  • Sal y pimienta al gusto

 

Preparación:

  1. Cortar las cabezas de coliflor en dos por el centro, con el tallo hacia abajo. No remover el tallo ya que este sujetará nuestros steaks. Luego, comenzando por el centro hacia afuera, y cortando de arriba hacia el tallo, cortar rodajas de coliflor de 1 cm de espesor aprox. Por cada coliflor a mi me salen 2 a 3 steaks, luego al llegar a las puntas, como ya no tienen el tallo que los sujete, simplemente cortar las flores que quedan, en trozos pequeños y separarlos.
  2. Juntar todos los ingredientes del chimichurri en una fuente grande, sal pimentar a gusto y colocar los steaks en esta preparación para que se marinen aprox 20 minutos.
  3. Mientras tanto, cortar ambos extremos de la cabeza de ajo entera y envolverla en papel aluminio con el aceite de oliva. Colocarlo en el horno pre calentado a temperatura media, o si estas usando la parilla, colocarlos directamente a las brasas por aproximadamente 15 minutos. Remover y dejar enfriar.
  4. Mientras los ajos de cocinan, y los steaks se marinan, colocar una olla mediana con agua hirviendo y sal, las flores que nos quedaron de coliflor y hervirlas por 5 a 10 minutos, hasta que queden suaves al tocarlas con un tenedor. Escurrir y reservar.
  5. Sacar los ajos del horno o de las brasas y pelarlos y ahora hay dos opciones: Puedes colocar los ajos con las flores de coliflor cocidas, el aceite de oliva, sal y pimienta y jugo de limón a una licuadora y procesar todo hasta obtener un puré suave, o utilizar un pisa puré y obtendrás un puré mas rústico. Es cuestión de gustos y posibilidades.
  6. Cuando nuestra parrilla o sartén esté bien caliente, colocar los steaks  y cocinarlos aproximadamente 10 minutos por lado, hasta que queden bien dorados y crujientes, y suaves en el centro.
  7. Servir los steaks con el puré y el resto de chimichurri encima. Pueden acompañarlos también con una ensalada fresca.

Si se animan, coloquen frutas en la parilla para el postre ! Nosotros pusimos rodajas de piña y rodajas de naranja y fueron un hit ! Caramelizadas y tibias, deliciosas !

It’s Picnic time !

Hello everyone !

We are melting in NY, the heat is unbearable at times, but there is a bright side: you can enjoy many activities outdoors, like Picnics !

We were lucky with my BF to have a super cute garden for a few days and decided to have a picnic , and although the day was beautiful and we were able to put everything out on the grass for a few minutes and make nice pictures , after a while began to rain. ..buuuu , so we ended up eating under an umbrella. It doesn’t matter cause any excuse is good to eat tarts ! sweet or savory, quiche, pie, in this case gallete . A very very simple version of a picnic pie that you can also eat on the couch if you want ! Be sure to save some portions to be eaten at breakfast time with coffee ! or pack it and take them to work! Yummm

Also, the good thing about galettes is that they are so versatile, you can put any flavor to your pastry by adding herbs, cheese, or cinnamon if you decide to go the sweet side. And same with the filling, you can use any vegetables in your fridge or fruit for sweet ones.

The pastry is so easy to make that once you dominate that, you’ll be making galettes no matter the season or occasion. It’s a great vegetarian dish and it can go along with some simple salad and wine. We ate this tart with a simple tomato, onion and balsamic vinegar salad and mixed olives. And off course wine.

Hernan also made his galette! and ate it with friends sitting in the grass. I don’t know what their friends think about him now, they might wonder why he stopped making barbecues and started baking picnic pies. Do they hate the girlfriend who makes him cook vegetarian recipes? I would be so happy if a friend suddenly starts cooking for me,  but in the world of film making i don’t know how that looks lol.

Anyway, enjoy the last days of summer, if you are in the north, bake pies and make a picnic, or if you are in the south, eat pie in bed watching the movie we recommend on this post.

This pastry can be used also to make sweet galettes, with fruit for example. Just add brown sugar or honey and skip the herbs.

Mixed mushroom and ricotta galette

Serves 4

Pastry:

2 cups whole wheat flour (you can replace with almond or oats meal)

3/4 cup unsalted chilled butter,  diced in small cubes ( 1 1/2 stick)

1 large egg

1 cup ice cold water

Salt, pepper and dry  or fresh thyme to taste

For  the filling

1  cup fresh ricotta cheese

1 large egg

2 cups fresh mixed mushrooms, thinly sliced  (cremini, shitake or any fresh mushroom you find)

2 garlic cloves, finely chopped

1 bunch fresh thyme (you can use rosemary, oregano, marjoram)

Salt, pepper, olive oil

Butter and flour for parchment

I used toasted almonds, fresh parsley and feta cheese to top my galette. You can use any nuts or seeds  and fresh herbs you like.

Preparation:  

1. Mix the flour, salt and herbes in a large bowl. Add the butter and toss until coated.  Using your fingers and palms, work the butter into smaller, irregular pieces, moving quickly and aggressively so it stays cold. Do this until the mix resembles coarse crumbs. Add the cold water and the egg little by little until the dough comes together to form a ball. Do not overwork the dough. If you do it will develop gluten and it will shrink in the oven. Transfer the dough to a lightly floured surface and shape it into a flat disk. Wrap it in plastic wrap and refrigerate it for at least 1 hour. Meanwhile turn on the oven.

2. In a large skillet , saute mushrooms with olive oil, sal and pepper until brown and crisp. Add garlic and set aside. Discard the liquid that occurs as a result of cooking the mushrooms. You can save it and use it as broth for another preparation

3. In a bowl, mix the ricotta cheese with one egg, add salt and pepper.

4. Roll out dough on a lightly floured sheet of parchment until you have a regular round shape about 1/8″ thick. It doesn’t have to be perfect. Transfer on parchment to a baking sheet. Spread the ricotta  over dough, leaving a 1 1/2″ border. Top with mushrooms. Bring edges of dough up and over filling, overlapping as needed, to create a border. Bake galette on high heat, rotating if needed, until crust is golden brown and cooked through, 25 – 30 minutes. Let cool slightly on baking sheet. Top with feta cheese, toasted almonds and fresh parsley.

For dessert with simple had chopped mango and coconut with a dip made of greek yoghurt, honey and vanilla. This dip goes along with any of your preferred fruits. It is summer and you should be eating tons of tropical fruits.

This weeks’s movie is a beautiful romantic comedy (even though i cried more than i laughed). They cook a lot and spend a lot of time outdoors so it is kinda like the perfect kick of motivation to make a picnic 😉

Hello everyone !

I want to recommend a beautiful romantic comedy called “Ruby Sparks”. For those who have seen “Little Miss Sunshine” the relevant fact is that it is made by the same directors. The tone is similar. But here they tell the story of a writer who falls in love with one of his female characters. Calvin Weir-Fields (Paul Dano) was a prodigy child, whose first novel had been very successful. But since then, he undergoes a systematic creative block aggravated by his dismal love life. Finally, he manages to create a female character, Ruby Sparks (Zoe Kazan), who ends up materializing and sharing life with him. So far so good. The problem begins when the protagonist realizes that can change every detail of her character – Bride – he does not like. “Improve” it. From there everything goes downhill. They say that couples are separated by the same things that united them in the beginning, right? Well, here is a case . Zoe Kazan is the screenwriter and lead actress Ruby Sparks, developing a theme based on the myth of Pygmalion: the asymmetry between the creator and his work. Through the fantasy story of Ruby Sparks, they touch the problem of difficulty in accepting people as they are. In the same line of films like My Fair Lady ( 1964 ) or Lars and the Real Girl Craig Gillespie (2007 ) , Ruby Sparks is a lighter proposal but it doesn’t stop doing quite uncomfortable questions about life , love and how we relate to that person we call ” boyfriend / girlfriend ” . Beyond expectations , illusion and that first wonderful time of the act of falling in love, what is love , if not the idealization on expectations that sooner or later are confirmed or dismissed ? Surely when you see this movie you’ll  feel identified on more than one occasion. Nothing better than being reflected on a screen and recognize yourself, right? Hopefully in your case, your film has a happy ending, but I will not tell you how the author  goes with his work. You tell me latter.

Hello World !

My name is Mariana Gutierrez and i just realized i wanna be a Food Blogger. Why? well, i just did a 6 month solo backpacker trip, from Colombia to Mexico, and it was an eye opener experience. I realized i want to keep moving and traveling and living in different cities and countries, i want to keep exploring, eating new fruits, meeting different cultures and getting out of my comfort zone.
And then there’s food, my biggest passion since i am a kid. Cooking is something i have in my genes, my whole family cooks for a living. Every family celebration is around food and food is always the main topic in our conversations.
So writing a blog combines my two passions, y get to write it from any location, i get to share with you what i eat, i get to tell you a little bit about the places i go, the flavors and culture, and i get to learn new cooking skills and share them with you.
So right know im 31, living for a while in New York and i recently found the love of my life. Yes ! sounds like all my dreams came true. There’s one detail though: my boyfriend couldn’t care less about food.
I’m vegetarian and crazy health addict. My boyfriend is an Argentinean carnivore, horror film maker, and absolutely incapable of cooking. And it’s really frustrating not being able to share your passion with the one you love. So we’re gonna start and experiment. Wanna be part of it?
I forgot to mention that Hernan (boyfriend) and i haven’t meet in person yet. He’s coming to New York in December, so meanwhile i want to introduce him into the healthy vegetarian cooking world.
We’re gonna be making simple recipes together (via video call) and i’ll post the recipe and both results, mine and his.
The good thing is we both share the passion for movies, so we’ll also be giving you movie recommendations and reviews.
I’ll share with you guys the love, food and movies we like.

So, first things first. Grocery shopping list !
This are my basics, on a budget (Argentina has so many politic and economic problems right now, that its not easy to find all ingredients with out going broke)

1. A nice extra virgen olive oil
2. Seasonal fruits (yes, he doesn’t even eat fruits)
3. Greek or natural unsweet yoghurt
4. A good organic granola, until we live together and can make our own granola (we’ll be posting the recipe)
5. Multi cereal bread
6. Green leaves
7. Vegetables. He doesn’t like any, so the basics like onions, garlic, tomatoes, eggplant, peppers, zucchini, carrots, mushrooms, etc
8. Beans, chickpeas, lentils
9. Nuts like walnuts, almonds, peanuts
10. Seeds, like sunflower, pumpkin and sesame
11. Cereals: quinoa, wild rice, cous cous, whole wheat pasta
12. Seasonings: sea salt, grain black pepper, curry, chiles, paprika, dijon mustard, coconut milk, tahini.
13. Fresh herbs
14. Raw organic honey
15. A good bottle of win, although i think we agree on this item.

And things he needs to get rid of:

1. White refined sugar
3. White rice
4. White wheat flower
5. White pasta
6. Frozen chicken (milanezas congeladas)
7. Industrial mayonaise
8. Cola Soda
9. Cream cheese
10. Soy sauce full of sodium
11. Fake mustard.

This movie’s week recommendation is: Captain Fantastic !
We went to the movies with my best friend (living with her in NY) and saw it and loved it !
She’s also a film maker and she did the beautiful illustrated shopping list in this post. So this is her review :

Sweet Child O’ Mine
I recently moved to NYC and every single day starts along huge emotions embracing my new life. One of the most lovely Sundays I had since I got here was the day me and my best friend went to BAM Rose Cinemas, we had no idea how awesome this place was gonna be but it made our day (and it is in our neighborhood!). So we chose to watch Captain Fantastic just because we felt something special was going on with this film.
Since the very first image of the movie my heart got crystallized and every single scene took me away to childhood memories and  remind me of a warm safe place to be. There’s so much love on the details, script, the soundtrack, the wardrobe, art direction, photography and OMG the characters! They represent all the magical persons we ever wanted to be.
It is a complex history with many sub-stories about how to rise your children away from the capitalism system and away from what today’s society imposes you about your life. And it shows you there are ways to do it right.
So basically it’s when you want to just say: Fuck it! I just don’t want to be part of this monster anymore.
And with this movie you can travel beyond that, and think about your own decisions and about yourself. The whole movie makes you feel as “if I’d stare too long, I’d probably break down and cry” And man you cry.
It remind me of my own parents, and I understood them: They were so hippies, and so wrong. But no, they were young and they were doing the best for me, so I regretted for every mistake they made and I say, I understand you now. When you do things with your heart you can be wrong sometimes, but eventually the love will rise and it will be just fine. And I thank my parents for that.
This movie is hiper-ultra-hipster but certainly has a style blessed by God and a hypnotic way to seduce you like a Demond. So beware, you may fall in love, you may cry, but you will have a great time for sure, and you are not allowed to forget it.
